Peanut Butter & Jelly Energy Balls

Let me just say: these energy balls are truly absurdly delicious. I've converted everyone from disbelieving dads to picky small children to set-in-their-ways grandparents on these mouth watering balls of yumminess. Hung up on past memories of energy balls that tasted mediocre or worse? Put them to rest with this excellent, easy recipe.

These little guys are packed full of nutritious ingredients like prunes, oats, and pumpkin seeds - but still totally taste like your favorite PB&J sandwich. Plus, the ingredients can be found in most bulk sections or in glass jars so you can prepare this recipe zero waste if you desire. Also, none of the ingredients need to be refrigerated so they travel extremely well and are great for road trips, plane rides, camping, hiking, or even just keeping in your work desk.

I also recently packed about a dozen of these bad boys for a 3 day cross-country Amtrak train trip from New York to Denver - and I couldn't have been happier to have them on hand!

Peanut Butter & Jelly Energy Balls

Ingredients:
  • ¼ cup pepitas (or hulled green pumpkin seeds)
  • ½ cup or 4 pitted Medjool dates, chopped into quarters 
  • ½ cup or 15 pitted prunes, chopped into quarters 
  • ½ cup rolled oats 
  • ½ cup natural peanut butter, salted
  • 1 ½ tablespoons coconut oil 

Steps:
  1. Briefly food process or chop pepitas until they are roughly half or a quarter of their original size. Remove from food processor into a bowl and set aside. 
  2. Food process or chop dates and prunes until they are pea-sized. Remove from food processor into a bowl with pepitas. 
  3. In a bowl, mix all ingredients with your hands until they are well combined. Still using your hands, roll into small balls about 1-2 inches in diameter. 
  4. Enjoy!

So simple. So easy. So yummy!
